thai gnocchi, prequel

  • - thawed gnocchi
  • - a jalapeno pepper
  • - mushrooms, lots
  • - garlic, lots
  • - ginger, lots
  • - onions, lots
  • - coconut milk, enough
  • - lime juice, healthy squirts
  • - red chili paste, proportion to coconut milk and desired color/spice
  • - sriracha, salt+pepper replacement
  • - 2pt. cumin, 2pt. tumeric, 1pt. cinnamon, 1pt. sugar
  • - fish oil, its a secret
  • - olive oil, for sautee
  1. start the olive oil, garlic, ginger, and onions in a wok
  2. mix the powders, pastes, milks, and oil, add 2/3 of total sauce to veggies as they brown
  3. simmer on the low for 15 min
  4. FYI, the gnocci should be ready now. strain.
  5. check the mushrooms. if they good, we good.
  6. last chance to add more lime, coco-nut, or such
  7. dump the curry slurry into a bowl
  8. throw the gnocchi on the wok, add some sauce,  hi heat for 1-2 min

  • ~20g spicy italian sorpressata, crumbled
  • finely sliced onion
  • some nice brie
  1. bring the onion, sorpressata, and a touch of olive oil to a sputtering simmer. the wonderful sopressata discharge will do most of the pan grease-work. drop the heat to low-medium and have a sip of coffee.
  2. toss in an egg. let the bottom turn opaque and harden around the precious cargo, enough to make it flippable. flip.
  3. put 3 or 4 wee brie cubes on the now-flipped, just-cooked backside. let the uncooked obverse tend towards entropy, then flip the brie-clad side back on to the heat.
  4. savor 15 seconds for the brie to reach full goober.
  5. serve on lightly toasted sourdough with slices of cold tomato.
